California is a 'Sweet Thang'
Pie…it actually evokes not only smells, flavors, and favorites…but sweet memories. Perhaps, particular loved ones and fond celebrations from our past. Few baked items are so uncomplicated and yet so difficult to master. Pie is deceptively simple; unlike cake, which is pretentious; pie is for the masses; making us all think of get-togethers, mom, and the simple comforts of home. Pie somehow ushers in pride; whether it is from the winning blue ribbon at the county fair or being known as utterly American. A slice of apple pie nearly demands ‘Ole Glory’ waving in its background.
I would not want to wax poetic about crust….but truly….this is the foundation to every pie. If it is flimsy, bland, forgettable, then you will find yourself scraping out the filling for consumption. Or, is it flavorful, flaky, and scrumptious….inviting the filling to ascend to new heights of perfection. Pie is in every way very similar to marriage. It will either be a work of amazing and unique art.spurring each component to greater heights together or it fights the other and ends up being a bad representation of what was meant to be.
So, my goal is to find the rare and amazing gems...the California gold of the pie world; and then SHOUT about them, celebrate them, and send as many folks to experience the divine in the form of pastry. This may sound a bit over the top, unless you have experienced works of art thru pastry.
During my day exploring the unbelievable Hearst Castle, I found by accident, one such pie shop in Cambria, California. “Linn’s Easy as Pie Cafe,” which is a superb oxymoron! This shop is a brick and mortar act of love to their community and all those who stumble in to feast on their creations. These folks go about 100 extra miles in the creating process by first growing all the filling ingredients with love and care…wow! The results are undeniable and have shot to the top of Aunt Tammy’s list of pastry perfections….5/5 stars! GO, no RUN to this shop and experience a true slice of heaven!!
